Industrial poultry slaughterhouse

A complete refrigeration solution for chilling, storing and processing poultry products

A complete refrigeration installation for an industrial poultry slaughterhouse in Algeria, including two carcass chilling rooms, ten chilled cold rooms, eight frozen cold rooms, air conditioning for two work rooms and a 3 tonne/day GENEGLACE ice plant.

This installation keeps the cold chain under control from the first stages of poultry processing to the storage of finished products. The solution was designed for the specific requirements of the poultry industry, particularly rapid chilling, storage, hygiene, temperature stability and continuous operation.

Background and client needs

For a new industrial poultry slaughterhouse in Algiers, our client needed a complete, high-performance refrigeration infrastructure to support the entire slaughtering, chilling, processing and storage process.

One of the main challenges was to chill the birds quickly and in a controlled way after slaughter, to preserve their freshness, food safety and shelf life. Keeping temperatures stable in the various storage areas was also essential to maintain the cold chain.

The project therefore had to meet very different cooling needs: carcass chilling, chilled storage, frozen storage, cooling of work rooms and ice production. Each area needed a solution suited to its use, operating conditions and specific heat loads.

AFRIC FROID was therefore asked to design a complete refrigeration solution providing precise temperature control throughout the slaughterhouse, while taking into account the constraints of the poultry industry: high heat loads, frequent door openings, heat from staff and processes, hygiene requirements and intensive operation.

Our work

AFRIC FROID carried out the technical study and heat-load calculations, sized the installations and designed a solution suited to each area of the slaughterhouse. Our work included the supply and installation of 2 carcass chilling rooms, 10 chilled cold rooms and 8 frozen cold rooms, as well as the design and installation of air conditioning for 2 work rooms. The project also included the supply and installation of a 3 tonne/day GENEGLACE ice plant. AFRIC FROID supplied the refrigeration equipment and accessories, supplied and installed the cold room insulated panels, and carried out the assembly and the refrigeration and electrical connections. The work continued with commissioning, operating tests and fine-tuning of the installation settings, and finally a remote supervision and control system for continuous monitoring of the performance and operating conditions of the whole refrigeration installation.

Project highlights

What was the client's challenge?

The client needed an installation able to control the cold chain throughout poultry processing, from chilling after slaughter to the storage of finished products.

The main challenge was to chill products quickly and evenly while keeping temperatures stable in the various chilled and frozen rooms. The installation also had to cope with the large heat-load variations of a slaughterhouse: incoming products, frequent door openings, air changes, staff, equipment and continuous processing.

The client also needed controlled ambient conditions in the work rooms, to ensure good working conditions while meeting food industry requirements.

Finally, 3 tonnes/day of ice production was essential to meet process needs and help keep products fresh.

What solution was proposed?

AFRIC FROID designed and built a complete, tailored industrial refrigeration solution covering the chilling, storage and processing stages of poultry products.

The installation includes two carcass chilling rooms for controlled cooling after slaughter, ten chilled cold rooms for fresh products and eight frozen cold rooms for frozen products.

To provide suitable conditions for staff and processes, AFRIC FROID also installed air conditioning in two work rooms, sized for the slaughterhouse’s specific heat loads and operating conditions.

A 3 tonne/day GENEGLACE ice plant was also integrated to meet the site’s ice production needs.

The whole solution was sized from a detailed study of heat-load calculations, operating temperatures and the specific constraints of the poultry industry, to deliver a reliable, high-performance installation suited to intensive industrial use.

What are the benefits of this installation?

The installation provides precise, continuous temperature control at every stage, from carcass chilling to storage of finished products. The chilling rooms ensure fast, controlled cooling, helping to preserve the freshness, food safety and characteristics of the poultry.

The chilled and frozen rooms provide storage suited to each product and production stage while maintaining the cold chain. The installation is also sized to absorb the large heat-load variations of the slaughterhouse’s daily industrial activity.

Air conditioning in the work rooms maintains suitable conditions for staff and processes, while the 3 tonne/day GENEGLACE ice plant provides ice directly on site to meet the slaughterhouse’s operational needs.

With an overall design fully suited to the constraints of the poultry industry, this installation delivers reliability, continuous operation, cold-chain control, storage quality and operational flexibility. It is a complete refrigeration solution that meets current production requirements and can evolve with the site’s future needs.
